Healthy No-Bake Cookies
- 1 cup almond butter
- 1/2 – 3/4 cup honey
- 1/2 coconut oil
- 6 tablespoons of cocoa powder
- 2 teaspoons of vanilla
- 2 1/4 cups of coconut flakes (or gluten free quick oats)
- Combine almond butter, honey, coconut oil, and cocoa powder into a saucepan and gently warm.
- Add vanilla and coconut flakes (or oats) then stir well.
- Scoop spoonfuls onto parchment or wax paper to cool. Place in a closed container and store in the refrigerator.
