Healthy No-Bake Cookies



  • 1 cup almond butter
  • 1/2 – 3/4 cup honey
  • 1/2 coconut oil
  • 6 tablespoons of cocoa powder
  • 2 teaspoons of vanilla
  • 2 1/4 cups of coconut flakes (or gluten free quick oats)


  • Combine almond butter, honey, coconut oil, and cocoa powder into a saucepan and gently warm.
  • Add vanilla and coconut flakes (or oats) then stir well.
  • Scoop spoonfuls onto parchment or wax paper to cool. Place in a closed container and store in the refrigerator.
